I made this a few days ago and still can’t get over how good it was : )
Ingredients:
1/2 cup or more homemade dill mayo
1/2 package good quality macaroni — I use gluten free rice pasta
Several cups greens
2 or more scallions chopped
Salt and pepper to taste
Directions:
1. Cook pasta according to instructions, chock in cold water and drain
2. Meanwhile chop scallion and, depending on which greens you’re using, you might need to cook them or not. I used blanched broccoli, and sauteed fennel and bok choy
3. Mix everything in a bowl — use a plastic spatula so you don’t break the macaroni
4. Salt and pepper to taste
5. Serve immediately, or better yet, let it marinate for several hours or even overnight in the fridge.
