I’ve always been a breakfast eater. I could say that breakfast is my favorite meal of the day, but then, I look forward to lunch too…
I not only like breakfast, but I like to vary my breakfasts. I get bored easily if I eat the same thing several days in a row. So I change it around depending on my mood, the season, and of course, what I have at home and how much time I have to prepare.
I also love sandwiches and paninis, but I don’t have them very frequently because bread and I have a… complicated relationship. If I’m going to have a sandwich, it better be a good one! And I think this one is worth sharing…
I had these radishes that needed to be used so I washed them and thought I could make a sandwich with them. Radishes are extremely powerful things. They cleanse your blood! But that’s not why I like them. They simply make awesome sandwiches :).
This is what I did:
I took 4 pieces of bread — 2 sprouted wheat for Scott and 2 millet for me — and lightly toasted them. In the meantime, I washed a bunch of radishes and 4 big leaves of beautiful Speckled Amish lettuce from my CSA share. I thinly sliced the radishes. Scott cooked 2 eggs over easy — we leave the yolk runny, not only for awesome flavor, but to preserve the wonderful enzymes. When the bread was warm, I topped 1 slice of the millet and 1 of the sprouted wheat with raw cheddar cheese and the other 2 with raw butter. On the buttered ones, I put the radishes and 1 egg each, salt and peppered them and topped them with 2 lettuce leafs. Finished with the cheesed slices, which I had let melt for a minute.
The result? A pretty original breakfast, deliciousness, and a meal that left me unable to think of food for over 6 hours… made in 5 minutes.
