One of my favorite salads… Give it a try and thank me forever :-).
Prep time: 10 min
Cooking time: none
Servings: 2+
Ingredients:
* 1 medium beet
* 1 large or 2 small carrots — about the same amount as beets
* 1 tbs. sesame seeds
For the dressing:
* 2+ tablespoons olive oil
* 1-2 tablespoons raw apple cider vinegar, or lime or lemon juice
* 1/4 to 1/2 tablespoons honey
* salt and pepper to taste
Directions:
1. Wash beets and carrots. Grate and set aside.
2. In a salad bowl, combine dressing ingredients until well incorporated. Add carrots and beets and toss.
3. Toast sesame seeds in small dry skillet over medium heat until they begin to give off a nutty aroma (about 2 minutes). Sesame seeds will burn quickly, so remove from heat as soon as they become aromatic.
4. Add sesame seeds to the salad. Toss and enjoy!

This looks wonderful. I have an organic garden. I have been gardening for over 30 years. Last year I discovered roasting carrots and baby red beets with olive oil, basil, oregano and lavender. Oh, I forgot to mention that! This is an excellent marinated salad — you know, like a slaw… It IS a slaw. That means it’ll keep in the fridge for a couple of days, yes.

Andrea….yummy….I can’t wait to make this salad. I have had beets from a can and put them on my salad at a salad bar and I love them. But, I must admit I have never bought a beet before. But I will find them at the store tomorrow. Doesn’t it look like a yam or sweet potatoe? What do you do just wash and peel for prep? P.S. Thanks Cathy! I do love what I do and I love that salad too, so that’s what comes across :-).

You can saute the greens too, but you will most likely find them without the greens. Either is good to start.
Just wash and grate (and peel, if they’re not organic). Let me know how it goes!

Hi Andrea, I made your beet salad recipe and I loved it! : )) And then I had recommendations/suggestions from my taste testers around the house to add chopped walnuts and pineapple tidbits. The salad was yummy without the additions and even more yummy with the additions! Thank you so much for the recipe.

Sounds great Cathy :-). Love the idea of chopped walnuts (probably instead of the sesame seeds). The pineapple though it sounds delicious, I’d leave it for the children. Lil’ too much sugar for me — remember beets are pretty sweet!
